"We got the beet, we got the beet, we got the BEET!.."

I can recall absolutely hating beets as a child; this rooty vegetable was just so...."rooty" in taste. I would have never thought thirty plus years later, the beet would end up one of my favorite vegetables to munch on. I honestly think it's all in the preparation of this vitamin and mineral enriched veggie. The taste of perfectly roasted beets infused with a bit of olive oil and fresh herbs soothes my soul. When I feel like being a bit more fanciful is when the balsamic vinegar reduction comes out to play. Delish!!!!

Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas). Beets also contain the B vitamin folate, which helps reduce the risk of birth defects.
